    I assume you're talking about GS/OS-based applications?  To get
accented characters, you need a two-key combination.  Option-e + vowel
will give you un accent aigu (sorry about the English/French mix). 
Option-` + vowel will give you un accent grave.  Ummmm... the rest are
option-u, option-i and option-o, I think (just experiment, or someone
else here will have the answer).  Option-c gives you a c-cedille.
