Recording from IIgs to camcorder (jittery pix)



I'm using an Apple IIgs and showoff to record title screens for a
video onto a camcorder.  I don't have a video overlay card so I've
hooked the composite video port up to the video input of the
camcorder.
 
The problem is, when I play the titles back, the video is a little
jittery and it wasn't like that when they were recorded in the first
place.  Showoff uses 320 graphics mode and I'm recording onto a sharp
slimcam (VHS).
 
My GS has an 8Mhz Zip card in it which is turned on.
 
Can anyone who has experience in this sort of thing tell me if it's
possible to get the jitter out of the recorded picture?  Would it
help if I turned the Zip off or if I used our 4 head VCR instead of
the camcorder.
 
Oh, this is a small project so please don't tell me to buy an Amiga
or an overlay card (unless you can sell me one for 50 bucks ;) ).
