..and it's more than just the 'FST' within OS X, too.
I went exploring and determined that from a plist perspective the only
thing missing was these lines in the hfs key section.

Adding them back then enabled Disk Utility to create HFS Standard
images again. Except...
It would get all the way past creating, formatting and "Finishing ...
" and right when it was going to mount it, an error dialog was
presented instead.
But, interestingly enough, taking the 'FST' (they reside in /System/
Library/Filesystems/) and putting it back to 10.5.7 removed HFS
Standard functionality from 10.5, but putting the modified one from
10.6 with the 'missing' key flags added back in, was just like it was
supposed to be.
So the change appears to be deeper than just the file system
parameters.
A side warning. Don't go mucking around in /System in OS X unless you
are versed in unix permissions, owners and groups. You WILL screw
stuff up otherwise. ;-)
