Let me turn the question around: why not? By the time you've hunted
through all the disks and found the files you wanted, you may as well
have used Installer anyway.
The main reason for using Installer is to make sure you didn't forget
anything. Copying the files by hand leaves too much room for error.
If you have a mixture of files from two different system software
versions, you are asking for trouble.
As an extreme example, imagine what might happen if you forgot to copy
the GS.OS file (and were still trying to use System 5.0.4's copy).
The system would be erratic at best, and would probably crash on boot.
Using old versions of some of the other files might have less obvious
results, but may still result in a peculiar crash.
Apart from anything else, using the Installer saves you from having to
work out precisely which files you need!

Use the Advanced Disk Utility program to re-partition the drive as a
single large partition. You will be offered the option of doing a
low-level format. After doing this, you can then re-partition it back
to the size you want.

Two drivers??? You should have SCSI.Manager and SCSIHD.Driver.
System 6 will always install these files, unless you are doing an 800k
disk installation. If in doubt, choose "Device: SCSI Hard Drive" (or
whatever it is called) in the Installer's Customized Installation section.
