Depends on the age of the enhanced IIe.  Older enhanced IIe systems
(and original IIe systems that were upgraded) use eight 64Kx1 chips,
while newer systems (the ones with the built-in numeric keypads and
platinum cases) use two 64Kx4 chips.  All original IIe systems use
eight 64Kx1 chips.  

My IIe started out with the original ROMs, was upgraded to enhanced
ROMs...and now the IIe motherboard is gone and has been replaced with
a ROM 01 IIGS motherboard. :-)

BTW, the RAM chips on my IIe motherboard were soldered, not socketed.
I think the system was assembled sometime in the second half of 1984;
it was purchased in July 1985.  Really old IIe systems (the ones with
white letters centered on the keycaps) probably used socketed RAM,
while newer ones (with black letters in the upper left corners of the
keycaps) used soldered RAM, whether they had original or enhanced ROMs.
