One of your suggestions is the HP DeskWriter. Will it work over Localtalk 
with a GS? 
 
More generally, is there a utility to redirect a captured (if one can 
capture) a printer file to a printer say over Localtalk or otherwise. I'm
think here of an HP-4M. The GS will print to it over Appletalk in 
Postscript. Suppose one wanted to send PCL, say from output captured by one
of the Harmonie drivers for a Laserjet? Could this be done? It can be done
by the way on a PC as the printer examines the first little bit of the 
file and determines if it's Postscript or PCL. It then prints accordingly.
The advantage of PCL is mainly speed in these cases.
 
Now for the really important question. Apple has come out with printers that
are and are not on Localtalk, although they appear in the Chooser of a Mac.
The new colour printer is an example. They are using software to make a 
printer attached to a Mac serial/SCSI appear to be on a network. Will this
be supported for the GS? If not, and if one wants a really nice colour
printer comparable to the Apple one, there is an IBM one with Postscript
and LocalTalk/parallel ports and automatic switching.
