Changing the volume name in the Finder is easy. Click the cursor on the name under the 'ram' icon. The cursor should turn into a beam and the name will be selected. Type the new name as desired and press return.
However, if you're doing a volume copy ie. duplicating the original disk to a matching sized disk this won't matter as the volume names should be the same. Duplicate names will confuse ProDOS and GS/OS will notify you of such a conflict.
