I haven't worked my way up to a full card yet, although I intend to
try some day. But for up to 4 outputs and 3 inputs, (4 on a GS) you
can go to

and get the "better mousetrap" book. Once you understand those
projects, other options will occur to you.

you can also look for "Apple interfacing" by Titus, Larson, and (the
other) Titus.

If you also want a good starter session on TTL logic and chips,
"Interfacing and digital experiments with your apple" by Englisher
isn't too bad.
