There are different ranges:
The small one ("Class 2") has 10m and the big one ("Class 1") is
rated 100m - both of which are reduced by walls, naturally.
Though you can mix these classes you need both devices rated
Class 1 if you want the bigger range - and most adapters, phones
and PDA's are rated only Class 2.
Bluetooth is apparently quite easy to hack but I don't know if this
would be a problem when used in the Apple II world.

If Uthernet is possible why not WLAN? But maybe this would work
only with an accelerated GS.
Logitech uses 2,4 GHz for its (more expensive) mice which works
very well. I got more than 10 m with walls in between - of course I
couldn't see what I was pointing and clicking but a friend helped
with that. ;o)
I don't know if it makes sense to salvage the hardware from the mouse
and the USB adapter but maybe this kind of hardware can be purchase
ready to go like LCD panels or micro controllers.
