I have a follow-up question: Is there any difference between the older
series ("Sound 1" / "Sound 2" / "Sound-Speech") and the newer one
("Mockingboard A" / "Mockingboard C"). I noticed that in Ultima 5 the
pitch of the music is slightly different between those choice when I run
them on my breadboard clone Mockingboard.

That's strange.  Both boards use the AY-3-89xx sound chips, and both
derive their clocks from the Apple peripheral bus clocks.  If set up
with the same parameters by a program, they should produce the same
sounds.
