The source code is divided pretty cleanly into a Mac-dependent portion
and a Mac-ignorant portion.
The Apple II emulation "engine" portion doesn't know anything about
MacOS X. But it does need Objective-C, FoundationKit, and standard
Unix/POSIX APIs. As Lyrical Nanoha points out, it could probably be
ported to GNUStep, and without too much trouble. That was in fact one
of my goals while writing it.
And, you could write an SDL- or GTK-based application around the engine,
provided you had the requirements listed above. Since GTK has no audio
support though (as I understand it), you'd have to bring in something
like OpenAL in order to play the sound output.

Catakig 2 is a "Universal Binary" -- meaning it's compiled for both the
PPC and Intel architectures, both of which are then supported in the
final executable. (That's the form most Mac software takes these days.)
So yes, it runs natively on Intel.
