Two things that can cause a case to yellow are exposure to flourescent
lighting and cleaning with ammonia-based cleaners (like Windex). Almost
all of the Apple IIs I've rescued from schools or offices are very
badly yellowed whereas the ones I've got that were used at home are in
much better shape. This would seem to indicate that flourescent
lighting is the biggest problem.
FWIW, only the Apple IIc was originally white... the rest were beige
except for the IIgs and the later IIe which were both "platinum" (ie:
grey).
