How about 1 chip - an FPGA!!!
But yes, you could do a "simpler" version (less chips). For example,
replace all the DRAMs (memory chips) with a single SRAM, or even DPRAM
(dual-port) and re-do the video timing. You could replace a lot of the
decode logic (74XXX) with a single GAL/PAL/CPLD. It's a matter of how
far you want to deviate from the original design.
