Actually I believe DE-9 joysticks (Atari / Commodore / Amstrad / Sega etc.) are a different kind of beast than PC joysticks. The Atari/Commodore sticks were always digital, while most PC (and Apple) sticks were analog devices.

Building an adapter for use of a PC joystick on an Apple is perfectly possible. In fact schematics exist somewhere, in the GSWorldView archive IIRC.
