I would run the applications on the Oasis emulator, and then
redirect the printer output to a PC file.  That would capture
the printed output quickly and easily.  This approach will work
with any emulator that can "print" from the emulated Apple II
environment to a PC file.

If the application can print to an Apple file, then you could
do that, then use CiderPress to convert the Apple text file to
a PC file.
