I could think of several that would be enhanced by accelerator card and
memory upgrade beyond 1Mb on IIGS, notably Delphine Software's
action/platformer "Another World" (aka Out of this World), Electronic Arts
roleplaying game "Will Harvey's - The Immortal" and Id Soft's Sherperd's
"Wolfenstein 3D" port, for starters!

I doubt any games are incompatible, most likely runs too fast and requires
deactivation.
