TaiFunBoot allows you to startup from multiple OS's, though they all have
to be installed on the boot partition (it does this by automatically renaming
the ProDOS boot stub file and System folder for each additional OS).

Yes, can select a default OS to always boot from. To change it you simply
hold down one or more modifier keys, which you can customize, that then
bring up a menu (you can even tell it to always come up). On my own system
I have it set so holding down the 'Control' at boot brings up the menu.

The menu system is GUI based (and very Amiga-like, right down to the
mouse pointer) with 9 empty slots to add an OS listing. The default OS is
marked in green; to boot from another you just select that entry and click
"OK". Two other handy features are the ability to boot from slot 5 or 6 (i.e.
floppy drive instead of the hardisk) and to toggle ProDOS 16 and GS/OS
system files 'on' or 'off'--all your INITs, Desk Accessories, drivers, FSTs.

On a side note, it's worth mentioning if you have a RamFAST SCSI
controller it offers built-in support to boot from other partitions by simply
holding down a corresponding number key from '1' to '9'.
