Eliza? Haha, just kidding... oh wait, except for some apps aimed at telecomm
and special needs folks, I'm having a hard time recalling any games with
speech in them.

I'm not really THAT concerned with the older apps and games personally. I'm
hoping for a renaissance of sorts... I'd like to see games like Silvern
Castle, which is still being actively updated, add mockingboard/speech
support.
