I made a CD-ROM with each of the seven System 6.0.1 floppies on it as a
partition (six ProDOS partitions and one HFS partition). I copied the boot
floppy's contents to a high-density floppy in one of my Macs to free up
space for the SCSI drivers, while the other disks were used as-is. Each
disk was imaged and then concatenated together, with a partition table
tacked on at the beginning. The partition table was created with a
quick-and-dirty utility I wrote, which you can find here:

The resulting image was then burned to a blank CD. When the disc is put in
the drive, all seven partitions show up in the Finder. It's bootable, too,
so you can install to a hard drive from it.
