The Apple II is a versatile little computer. I don't know if Apple IIs
are typically used in that kind of medical equipment, but there's nothing
saying they couldn't be. They may not have the bandwidth to handle the
video itself (it depends on resolution and frame rate), but the
annunciator outputs can be used to control hardware.

Though I'm not sure if you can use the annunciator outputs and play with
your joystick at the same time...
