The Apple II is more than capable of using MIDI. Your best bet is eBay for
software and controllers though - they pop up there off an on. Passport made
several cards and a lot of software for the II, so thats the brand you
should look for most - it would be the most compatible. If you have a GS,
you can use Apple's own MIDI interface (its also Mac compatible).

A few Artists and Groups that I know who used the Apple II and MIDI for (at
least some of) their music include:

Rush
Herbie Hancock
Berlin
Duran Duran

And the Apple II has controlled more than a few laser and light shows at
concerts too. Mostly II+ and //e machines back then because they were built
like tanks, travelled well and were "roadie-proof". By the time the GS came
out, there were no compelling reasons to upgrade or many artists moved on to
other platforms.

Did you know, that to this day there are some stage light shows controlled
using Apple II computers?
