NadaNet is certainly an example of what you've talked about.
Speaking of which... Can an AppleCrate machine do the following? One MB
control a video display, another run your sound software, and can the
two do so in combination?

decade is the puffery of "dreaming" about an extension that "could"
exist, followed by flurries of breathless "yeah, wow, and _this_, too!"
replies, dwindling to silence and no net contribution--unless we count
it in the bad fantasy and science fiction column.
Been there, done that, scars are still healing.
A friend was sure that he could create a trubo card using a PowerPC
chip, and just emulating the 65XX series. He was sure he could add IDE
and ethernet. Hoped he could add VGA.
Alas, he's much too interested in the Lisa now....
