Yeah, it should, as long as you have (or get) a Super Serial Card and a null modem cable.

I've done the same thing with my IIgs, which is connected to my Power Mac 7600 with a Mac/IIgs->ImageWriter printer cable. It might be a bit weird if you run the terminal faster than about 9600 or 19200 (my GS can do 38400 without dropping characters in fast mode, dunno about a stock II), but it does work. I've even used the GS as an emergency terminal for the 7600's Open Firmware (for when my adventures with alternate OSes on the Mac go awry).
