Sounds like your flawlessly operating UniDisk is no longer
flawless. Perhaps the write-protect switch is failing or
just sticky. If you eject and reinsert the disk, will it
then write to it? Have you cleaned it lately? Could be just
an amount of dirt has build up around the switches and is
keeping the write-protect switch from making contact. It
could be a number of things preventing it from writing to
a disk, but the write-protect seems the most logical to me.

Although the Unidisk 3.5" drives work with the IIgs, why
would you want to waste it's talent on a GS when the plain
old Apple 3.5" drives work better with it. I save my 3.5"
UniDisk drives for my //e with Liron controller and IIc
with Unidisk capable ROM.

I'd be happy to trade a good working Unidisk drive with
you for your troublesome model, if you'd like.  :o)  Let
me know.
