What steps can I take to make this machine more compatible with the //e?

The major missing elements AFAIK are the enhanced instruction set of the 65c02 with the enhanced ROMS and character generator chip.

Is this a feasible project and if so does anyone want to help?

If you have a real II, not a II+, I would urge you to keep it in original condition. You have a collectors' item there. You can get a IIe for just a few dollars, and some of your upgrades can be put into the IIe to upgrade it (like you Zip chip - I need to remind myself that Coveting is still a sin.)
