I would know what is the difference between the books "Understanding Apple II" and the "Understanding Apple IIe" by Jim Sather. Contains the second all the informations of the first book adding something, or they are different is some parts?

Without having read the books myself, "Understanding the Apple II" most likely deals with the Apple ][ and Apple ][+ models.

"Understanding the Apple IIe" most likely deals with the Apple //e.

There are physical differences between those types of machines. Basically, the //e has lots of firmware enhancements that allow it to use upper and lowercase alphanumeric characters (the earlier Apple II models used only uppercase characters) as well as being equipped with more RAM. The machines' ROMs (liken it to a PCs BIOS) are also different.
