Do you mean text/graphical adventure games? Of those, I like:
- Transylvania
- Crimson Crown (aka Transylvania II)
- Transylvania III (only IIGS version exists)
- Masquerade
- Sherwood Forest
- Mickey's Space Adventure
- The Dark Crystal: An Elfling Adventure
- Mystery House (the one that started it all!)

As for text-only adventure games, my choices are:
- Douglas Adam's: Hitch Hikers Guide To The Galaxy
- Zork series
