You can download the compilers the others have
mentioned but you will find they have the same
limitations as Applesoft, namely they work in
8-bit emulation mode, unable to fully (if at all)
access the capabilities of the IIGS and GS/OS.

Based on what you seem to ask for, I would
suggest ORCA C or ORCA Pascal.  Those
are pretty much the way you write the GUI
windowed GS/OS programs you see.

Unless you want to program "on-the-metal" in
which case I don't know where you would start.
It can be done as the late FTA dramatically
showed.
