I absolutely agree... GS/OS is like Macintosh System 6 running on a
mechanical adding machine... An enhanced IIe with 4 x 5.25" drives,
mouse, and a Super Serial Card is all the computer you will ever need.
If you can find an amber monitor instead of green then all the better.
If you must have a GUI then Apple 2 DeskTop is almost as slow as GS/OS,
but nowhere near as complicated.
Second choice would be a //c -- handy because it's got all the standard
expansion cards built in... not to mention it is without a doubt the
coolest looking computer ever made.
If you're really in a bind, a IIgs makes a pretty good Apple II emulator
;-)
