I think that's an excellent idea for a project, especially in view of
the relative scarcity and high shipping cost of GS monitors. 

Personally, I'd like to see a similar device for the older Apple IIs
since the prospects for decent colour video on those models are even 
scarcer, though I realise that would be a more involved project.
