The no-extra-hardware method would involve running a null-modem cable
between the two machines, setting up a PPP daemon on the Linux box, and
making sure the necessary routing information is set up (I think the daemon
might do this for you).  That'll probably be good for no more than 57.6
kbps, though...possibly less.  

The not-too-much-extra-hardware method uses a GatorBox to bridge LocalTalk
to Ethernet.  You'll find them pop up on eBay every once in a while; they
tend to be dirt cheap as not many people want them.  I paid $20 for mine. 
You'll want to at least have access to a Mac to do the initial configuration
of the GatorBox (you can telnet into it once it has a suitable IP address
configured), but it provides MacIP service that's compatible with the
Marinetti MacIP link layer.  (With a serial connection, you'll use the PPP
link layer.)  With LocalTalk running at 230.4 kbps, this should
(theoretically, at least) be faster.  With a GatorBox, you can also run
netatalk and use your Linux box as extra storage for your IIGS.
