They are all in the relevant hardware/technical reference manuals, of
course.

The IIe doesn't have a "memory expansion" slot as such, but I expect you
are referring to the "auxiliary slot", which is primarily used to expand
the memory.  The standard slots in the IIe and IIgs can also be used for
some types of memory expansion.

The IIc memory expansion slot only exists in the IIc+ and the last two
models of the IIc.  The first two IIc models have no built-in capability
to expand their memory, but Applied Engineering came up with a method of
doing so, by intercepting the signals between the motherboard and the
CPU and MMU chips, and adding a piggyback card.

Part 13 of the FAQ for this group (Hardware Hacking) summarises the
pinouts of the standard slots.  I didn't see anything in there about the
pinouts of the other slots.

I don't have time to type in the details of the others right now, as you
would probably need a fair amount of additional detail to make sense of
the pin signal names.  I wouldn't recommend attempting to connect any
custom hardware to these slots if you don't have access to the official
hardware documentation for the computers in question.
