The best simplest way would be to get an old low-end mac i.e. SE, SE30, LC, 
LCII, etc and run either Appleshare 2 or Appleshare 3 file servers. (you 
can often substitute a serial cable to use appletalk between just two 
computers)

Development has progressed on booting an Apple II from Netatalk (under 
Linux) but you would still need a bridge between ethernet and appletalk 
cabling.
