I would imagine that HFS formatted Zip disks would be the most reliable
means of file transfer between these two machines.

In terms of networking, you will definitely need some sort of bridge.
An older Macintosh sporting serial and ethernet ports may do the job
nicely, and is cheap.  Apple has the LocalTalk bridge software on their
FTP site.  If this option will work at all, you will also have to heed
the advice at: <http://www.euronet.nl/users/mvdk/osx.html>  Hopefully
you don't have to upgrade the AppleTalk software on the IIgs since such
an option probably does not exist.

At the end of the day your little LAN will probably feel like the
patchwork solution that the internet is.  <sigh>
