Hmm... I have a few cables that are definitely Apple... din-8 to DB-25, with a little printer icon stamped on the end (like the one on the back of the GS)... I suppose they might be for an Imagewriter...
I was wondering if such a thing would work as a modem cable, or could be
adapted for such a purpose...

No, printer and modem cables are wired differently. Also there's two
different modem cables. The non-hardware handshaking one will only go
up to 9600 baud. For faster speeds you need a hardware handshaking
cable. The FAQ has the pinout of the hardware handshaking cable. You
should still be able to pick one up from a Mac store.
