I don't know what an Aztec card is, but the PCPI card is superior to the MicroSoft card. How so?

6 mhz vs 2 mhz
64K of RAM vs 0K
The ability to have it's own serial connection with higher speed Z-80 family parts. Finally, the ability to expand to 128K of RAM (if only I could learn how to add that on....)

Both cards have the Apple and it's 6502 doing some of the work, like interfacing with the keyboard, disk drives, etc.

2) Regarding CPM cards.

Are there significant advantages, disadvantages to say a Microsoft CPM
card vs Aztec? Do these cards generally need special software to run them?
(There is one on ebay but there isn't any software (Aztec or something).)

Then, does the CPM floppy just go in the A2 disk drive?
