apple 2 scsi card and networking questions.

hi all,

i finally struck gold (i hope).. i have been collecting apple 2 stuff for
quite a while but have been suffering along with no hard drives in any of
them.

anyway i found today a apple2 scsi card still in its box and everything .. i
got it for 75 cents.

my question is now what do i do? i have plenty of external scsi cases and
25 pin to centronics 50 pin cables (which my external cables have) and have
everything from a 250 meg scsi drive all the way up to a 2 gig drive, which
one should i use and what is the best way of configuring the scsi drive for
bootabiltiy??

also is there any way of using my powermac 7500 (which is connected to my
network via dhcp and a NAT server for internet connectivity) so that i could
access the massive amount of stuff that i have downloaded for the apple 2??
(i vaguely remember someone sayig i could use the apple talk or localtalk or
the modem ports in the back of the gs). my gs is a rom 3 model with a 2 meg
ram card and now will have that scsi card.
