Keep in mind that the IIGS composite video is not "real" Apple II composite at all.
It's simply the RGB output converted to composite, with all the drawbacks of RGB for 8-bit software (so none of the advantages of composite), plus all the drawbacks of composite (so none of the advantages of RGB).
IMO, on a IIGS, run everything RGB, and if you don't like how it renders, run it on a //e or //c.
