You can use extra utilities to make use of //e, //c or //gs extra RAM (i.e.
extra 64K RAM within the extended 80col. card space or using the AE RAMWorks
type memory protocol).
One such utility is described here:

And, by the way, there were numerous articles which describe methods and
ideas about extra RAM usage from within Applesoft. The right utility to
choose from is all about what you want Applesoft to manage: a) very large
programs with normal amount of variables and w/o resorting to chaining
program modules for any reason or 2) normal size programs but with a huge
amount of variable space (mainly array variables with "big" dimensions) or
3) a combinaison of the two.

If you are meaning the extra RAM that are in //c memory expansion card or in
a AE RAMFactor card, then I think that the best usage that can be made out
of this memory is some kind of file based (making a RAM drive out of it).
