I use The Flaming Bird Disassembler, a French //gs product of the '90s, probably the most powerful app out there.

Jet and FS2 are harder, that's correct. Not in getting the data but in rewriting the RWTS and putting the code at the right place (and it is rare!)
FS2 is a 18-sec protection scheme. Correct me if I'm wrong but it is probably the first one created on the Apple II.
