You won't get much out of the composite port to improve on, because there's no way to get an S-Video signal due to the chroma and luma being combined in the signal generation. If you have access to a Ramworks III card with an RGB option then you could convert that to CGA or VGA.
Haven't heard of newer LSD monitors, but I'm sure they're extremely colorful!
