I had the same problem years ago when I had my first GS with a 
hard drive and was trying to install GSOS 6.0.1.  As I recall 
the problem persists when I tried to uninstalled 
with the installer.  A Big Red newsletter said this was a bug.  
 
What I wound up doing was installing system 6.0.1 as directed.  
Then I booted a modified system 5x system disk and manually 
dragged the appletalk files out of the system folder.  I think anything
beginning with AT goes.  Check drivers, cdevs, and system.setup folders.  
I made the made the modified 5x disk from the system disk by 
deleting enough fonts (67k in system 5.0.3) so I could add the 
SCSI.manager and SCSIHD drivers (27k) to the driver folder found in 
the 5x tools disk.  When my harddrive crashes because I've installed an
incompatible something or other, I use the modified disk to drag it out.
