I've done something like that. I desoldered the powersupply connector from a
junk PC motherboard, attached wires where it had been soldered to the board,
and plugged it onto the connectors coming from the AT powersupply. I did it
to make an extender, but it would work the same if you soldered on the wire
harness from a junk IIe powersupply.
