Now I got these old Apple II GSs running, now what? What can I do useful on
them? Anybody know of any good RC plane sims, model rocket programs, or
teach yourself programming compilers?

For programming there are two (maybe three) languages you can access
immediately. Applesoft BASIC, 6502 assembler, and maybe Integer BASIC.
There are maybe a dozen other languages you can find from various
sources. Some are free and some are commercial. A few are orphaned.

Anyplace where I can DL these off the web?

You could check out the Azimov or Ground archives. I haven't visited them in a while so I don't know what is there. The URLs (ftp addresses) will show up eventually. Worst case, wait until the FAQ is posted or see if someone is willing to post the URL to the web version.
