It should display in color, assuming your using software that
outputs color information (try something like "Confidence ///"
diagnostic, which displays graphical color bar tests).
Keep in mind however only 8 possible color values will appear
(instead of the full 16) and they won't correspond to what they
should be. All color information will be WRONG. You need an
Apple Monitor 100 or other digital RGB display (old CGA/TTL
color displays will work with a properly wired cable).

I vaguely remember Apple II emulation only supporting
1-bit monochrome through RGB video-out. If you wanted
color, you had to connect up a composite display (or TV)
to the B&W video-out connector (RCA jack). For some
reason I remember colors looking washed out though it
could have just been my particular Apple III or a faulty/
loose cable.
