Interesting, as the Apple III doesn't have an interlaced mode. :)
The Apple III Plus does though, which is activated by flipping a
switch on the side of the case.
Apparently there was a (third party?) upgrade kit for the original
Apple III to add interlaced video, perhaps you have that installed?

I remember it doubled the vertical resolution, so it would
actually be 240x384 and 560x384 interlaced.

Depending on the screen image, the interlace effect can be less
noticeable at times than others. Anything with lots of fine horizontal
lines will flicker much more intensively. What did you look at, a text
or graphics screen incidentally?
One important thing to keep in mind, regardless of interlacing,
is the color information won't be correct (greens may be blue,
reds may be yellow, or several colors may show up as yellow.
Not that exactly, I'm just giving you an idea of what happens
using an analog RGB on something that outputs digital).
