I just spent 5 minutes with the PCB CAD program and I've got a nice
blank PCB with plenty of holes/pads, very similar to the one pictured
on the webpage mentioned later in this thread.

A/D converter:  Mountain A/D, Applied engineering A/D, 

or:

 my parallel card A/D system (25 channels).  I got 6502 assembly code
drivers, and a nice BASIC program that will collect, graph, and store
readings.

requires an Apple Inc. parallel card or compatible.
