Well I did something similar but with MSX "FM Pac" and Atari Falcon030 
DSP XTM sound format for a friend.

In the first case I recorded the MSX sound on a tape and I sampled it
and encoded it into MP3 format. The MP3 sound was quite good (just a
little bit muffled) encoded in MP3 44Khz stereo.

In the second case (the better), I pluged a cable in the Falcon030 audio
output and in the pc audio input. So the pc sampled the music while the 
Falcon030 was playing it. The quality was very good. I encoded it in
MP3 format to.
     
So I was wondering if someone did the same to record/encode Apple 2GS
sound. I hope that someone did it ! Otherwise my only hope would be to
buy a 2GS, but nowadays it's hard to find ! :^)
