With the IIgs hard drives you generally don't have a choice of startup partitions.
On most SCSI setups the IIgs will want to start off the first partition of the SCSI
device with the highest ID #. If that's where you installed System 6.0.1 then
possibly you need to set your SCSI cards slot as the startup slot in the control
panel.
You can reach the control panel by pressing and releasing the escape key while
holding down the Apple and control.
In the control panel called slots you can change the startup slot. If your SCSI
card
is in slot 7 then set it at scan or slot 7. If your SCSI card is in another slot
then set
it for that slot #. after you've exited the control panel you'll need to reboot
before
most changes come into effect
