... and to continue the wish list:

include support for a CP/M 2.23 partition and a dozen DOS 3.3 140k

True. However, this would mean you would have done it yourself. 
Apple II is a hobby, for daily work you will use your PC or Powermac.
Building a nice hardware project and writing software for it ist much
more interesting than just spending money. Especially if a few people
decide to work together.
